Is this Spanish correct?

Hey, it’s not bad at all. Just one or two points:-
Fuimos en coche y barco – it would be better to say “en coche y en barco” – you have to repeat the preposition in lsists like this in Spanish. If you are trying to say “They went to the shops whilst I went for a bike ride” it would be best to say “Ellos fueron de compras “THEY went shopping – i.e. the others) mientras yo di un paseo en bicicleta (dar un paseo en bicicleta – “to go for a bike ride”).
I had a good time – ¡Lo pasé bien! – Don’t forget the accent on “pasé”

I’d put the mientras in front of the family going shopping:
Mientras mi familia fue a las tiendas, yo di la vuelta por las calles del pueblo en bicicleta y luego descanse.
